Stir in the gluten free oats, salt, and chocolate chips until completely combined. In a medium saucepan over medium heat, bring the sugars, milk, and butter to a boil, stirring occasionally.
If you feel like getting out your mixer you can beat the mixture to guarantee the sugars dissolve.
If you want to make your no bake chocolate chip cookies even more special, you can swap out the mini chocolate chips with things like butterscotch chips, mint chocolate chips, or peppermint chips.
Spread the "dough" out evenly, making sure to get it all the way into the corners of the pan. Add all of the ingredients, except the chocolate chips, to your food processor. If the dough seem dry, add an extra tablespoon of coconut oil and a splash of water to bring the dough together.
