Add the pumpkin puree and vanilla, beating until combined and scraping the sides and bottom of the bowl as needed. In a large bowl, beat together the sugar, pumpkin, oil, and eggs until fully combined. In a medium bowl, sift together flour, baking soda, pumpkin pie spice and salt.
Spray the bundt pan with baking spray.
Add the pumpkin, beating until well combined.
Generously grease a fluted tube pan (such as Bundt®). Pour into a well-greased bundt pan. In the bowl of a stand mixer, or a mixing bowl with handheld blender, add the sugar, oil, eggs, vanilla, pumpkin, and sour cream.
