Pineapple Upside Down Bundt Cake. Line bottom of pan with pineapple slices. Alternate placing halved pineapple rings and maraschino cherries around the pan.
Cream together the butter and sugar for the cake until light and fluffy. Spray a bundt cake pan with a cooking spray really good. Pour melted butter into the pan and sprinkle with brown sugar.
Spray you muffin pan generously with cooking spray and set aside.
Pour the butter-brown sugar mixture around the pecans and cherries.
In bowl mix together your brown sugar and butter and pour into bottom of prepared pan. In one medium bowl, sift together the all-purpose flour, baking powder, and salt. In the bowl of a stand mixer fitted with the paddle attachment, whip the room-temperature butter, granulated sugar, dark brown sugar, and vanilla extract until light and fluffy.
