Sugar Free Carrot Cake. In a separate bowl, add in the cream cheese, honey, and vanilla extract. Put raisins in warm water to plump.
In a chilled mixing bowl beat the heavy cream until soft peaks form. Heat the sugar, flour, arrowroot powder, salt, and milk in a saucepan over medium heat, whisking frequently. Beat the egg with the yogurt, stir in the coconut oil.
Now in a mixing bowl, beat together the eggs, oil, and sugar alternatives.
Stir the dry ingredients into the bowl with the wet ingredients.
While the cake bakes, make the cream cheese frosting. Add all wet ingredients—the carrots, eggs, oil and dates—to the dry ingredients and mix thoroughly. Sift together flour, baking powder, salt, cinnamon, nutmeg and cloves; set aside.
