Moist Carrot Cake Recipe. Stir in shredded carrots, crushed pineapple, chopped nuts and flaked coconut. Add eggs, one at a time, allowing each egg to blend into the oil mixture before adding the next.
Stir flour, baking powder, baking soda, cinnamon, and salt together in a bowl; beat into the wet mixture.
Allow cake to cool completely before frosting.
Remove from oven when loaf is baked through and a toothpick comes out clean. In a medium sized bowl whisk together vegetable oil, brown sugar, white sugar, eggs, applesauce, and vanilla. In a large bowl whisk together the flour, baking soda, cinnamon, nutmeg, cloves & salt.
